Our delicious diet chocolate cake is tasty and healthy (it doesn’t contain any cocoa butter, that is unhealthy saturated vegetable fat. Also it doesn’t contain white sugar, but brown sugar – good for health).
Do you want to taste something special for your breakfast or surprise positively your friends during birthday party? – This chocolate cake, moist and delicous, will make you feel happy! Just try to make it!
Ingredients for pancakes:
400 grams of sifted white flour
150 grams of bitter cocoa powder
packet of quick-rising baking powder
500 ml of milk
4 raw fresh eggs
200 grams of cane sugar
150 ml of sunflower oil.
Bake pancakes for 10 minutes at 220°C (440°F)
Ingredients for chocolate cream for cake topping:
500 grams of fresh cottage cheese
100 grams of cane sugar
75 grams of bitter cocoa powder
100 ml of sunflower oil

To prepare the chocolate dough, first combine all the dry ingredients.
– First, place 400 grams of sifted white flour (type “00”) in a suitable container.
– Add 150 grams of good-quality bitter cocoa powder,
– then add a packet of quick-rising baking powder.
– Begin mixing gently with a hand whisk, being careful not to dust the mixture.
Once you have a smooth, lump-free dry mixture, begin preparing the liquid component of the dough.
What I love about this recipe is how quickly and easily it makes the chocolate cake pancakes.
– Pour 500 ml of milk (whole or half skim, as preferred) into a separate container and let it warm slightly until lukewarm.
– Separately, beat 4 raw fresh eggs with a mixer and
– add 200 grams of cane sugar, whisking until the sugar is completely dissolved in the eggs.
– Pour this sweetened egg mixture into the milk, whisking well with a mixer.
– Then, while stirring, add 150 ml of sunflower oil.
– Gradually add the resulting mixture to the dry flour mixture prepared at the beginning.
Vigorously mix the resulting liquid batter, first with a whisk and then with a mixer.
Let’s start baking the chocolate pancakes. Place a pre-made round mold made of aluminum foil on a baking sheet, using your choice of a frame of your future
chocolate cake. Line the mold with parchment paper inside it and pour in 2 ladles of the prepared liquid chocolate batter. Cover the pan with a sheet
of parchment paper and bake for 10 minutes at 220°C (440°F). Remove the baked cake from the oven and carefully peel it off the paper.
Place a new sheet of parchment paper in the same pan and pour two ladlefuls of liquid chocolate batter into it. Repeat this entire baking process two more
times, to make three chocolate cakes. To check for doneness, pierce the baked dough with a knife blade. If it comes out clean, this means the
pancake is ready and baked through.
Now place all three pancakes on top of each other on a rotating tray to estimate how much to trim the edges.
Let’s begin cutting the cakes using a knife and saucer. Place the saucer on the pancake and begin cutting a circle with the knife, equal distance from
the saucer’s edge. So, cut all three cakes the same way. We also trim off the convex top of each cake and the slightly burnt bottom to ensure good absorption of the cream.
Each pancake, as the surface of the cake becomes porous when cutting off the flat surface of the cake, will be affected.
Now we’ll prepare the chocolate frosting for our real chocolate cake.
Place 500 g of fresh cottage cheese in a separate deep bowl. Stir the cottage cheese with a spoon and add 100 g of cane sugar. Mix thoroughly with a steel whisk.
Add 75 g of bitter cocoa powder and continue to mix the cottage cheese mixture thoroughly. Add 100 ml of sunflower oil to this mixture.
And continue to mix the chocolate cottage cheese mixture. Transfer this mixture to a deep saucepan and beat thoroughly with a mixer until smooth.
Begin spreading a thick layer of cream onto each flatbread, placing them one on top of the other to form a cake shape.
Now let’s begin frosting the sides of the cake, trying to achieve a smooth, even surface. Finish smoothing the sides with the flat side of a knife,
and then with a spatula for serving the cake pieces. Finish decorating the cake by putting on top of it some delicious fresh candied cherries. And here’s our chocolate cake!
